Making banana bread is our number one way of using up extra bananas we just didn’t get around to eating that week. On the down low, I buy bananas with no real plan for them on the chance a few will make it to the end of the week to make banana bread.

This recipe comes from Sally’s Baking Addiction. I’ve been visiting her page a lot because she has so many varieties of tasty treats! The core recipe is hers, I took the liberty of changing up the add ins and giving it and extra crunchy topping. I’m going to be honest though, I didn’t go searching for a whole wheat recipe because it was healthier. I was looking for a 100% whole wheat banana bread because I bought several five pound bags for .23 cents each! Granted, they’re past their best by date, but still good!

Storage

The bread will stay fresh in an airtight container at room temperature  for up to 5 days or in the refrigerator for up to 10 days. For longer storage, baked bread can be frozen up to 3 months. We like to slice the bread before freezing so that slices can be thawed individually. Thaw overnight in the refrigerator or eat them frozen like my husband does.

Ingredients

  • 6 Tbspn unsweetened applesauce
  • 1/4 cup honey
  • 1/4 cup packed brown sugar
  • 2 tspn vanilla extract
  • 1/4 cup almond milk
  • 2 large eggs
  • 4 medium ripe bananas, mashed (about 1 and 1/2 cups)
  • 1 and 3/4 cups whole wheat flour
  • 1 tspn baking soda
  • 1/2 tspn ground cinnamon
  • 1/2 tspn salt
  • 2/3 cup semi-sweet chocolate chips
  • 1 Tbspn whole wheat flour
  • 1/4 cup roasted almonds
  • 1/8 tspn sea salt

Directions

  1. Preheat the oven to 350º F. Spray a 9x5 inch loaf pan with non-stick spray or line with parchment paper and set aside.
  2. In a medium bowl, whisk the applesauce, honey, brown sugar, vanilla, and almond milk together until combined. Then, whisk in the eggs and bananas until combined. Set aside.
  3. In a large bowl, whisk the flour, baking soda, cinnamon, and salt. Pour the wet ingredients into the dry ingredients and slowly whisk until combined.
  4. Reserve 1/4 cup of the chocolate chips and coat the rest with the tbspn of whole wheat flour and gently fold into wet mixture.
  5. Pour the batter into the prepared loaf pan. Top with remaining chocolate chips, chopped almonds, and a sprinkle of seas salt.
  6. Bake for 60-65 minutes. Loosely cover the bread with aluminum foil after 30 minutes to prevent the top from getting too brown. The bread is done when a toothpick inserted in the center comes out clean with only a few small moist crumbs.
  7. Allow the bread to cool completely in the pan.
