The Perfect Side/Meal/Dip… yes.

Mashed potatoes are the best thanksgiving side, hands down. Why? Well, one, it’s a creamy vessel for the indulgent flavors of butter, cream and salt! Two, while it is technically a side dish, it’s really a dip in disguise. If you were to put out a cup of bbq sauce for your chicken tenders, people would judge you; but serve yourself a heaping cup of mashed potatoes, and dip those crispy suckers in that, and you’re okay! Lastly, it’s a great spread on a thanksgiving leftover sandwhich, trust me, get two slices of bread (or dinner rolls!) slather it with mashed potatoes, a few slices of turkey and some ham, oooh, and some gravvy, and you’ve got a treat. And if you really wanted to, just add some chicken bits on top and it’s a complete meal.

So yeah, it’s a basic “side dish”, but the possibilities are out there, we just have to get creative and find them! So! If you’re interested in the recipe, let’s get started!


Creamy Mashed Potatoes with Parmesan Cheese

Ingredients

  • 3 Tbspn Kosher Salt
  • 4 lbs Idaho Potatoes
  • 1 cup Melted Butter
  • 1 cup Greek Yogurt or Sour Cream
  • 2 cups Warm Milk
  • 1 tspn Kosher Salt
  • 1/4 tspn Pepper
  • 1/2 Cup Parmesan Cheese

Directions

Total Time: 50 Minutes

Servings: 8.

  1. Rinse the potatoes and make a slit around the short side of the potatoes.
  2. Fill a large pot with water and add the potatoes. Add Tablespoons of salt to the water until it tastes lightly salty.
  3. Set water to boil until potatoes are fork tender.
  4. Remove potatoes and add to a bowl of cold water. Now you can remove the peels easily.
  5. Mash the potatoes with a hand/stand mixer, potato masher, or even a fork if that’s what you have, and add the remaining ingredients until smooth.

Got Leftovers?

Spread mashed potatoes on some white bread with some leftover meats n’ gravy and toast it! Trust me, it’s a yummy sandwich.

Fry it up with an egg! Just put some butter on the pan, add a dollop of mashed potato and make a hole to add an egg in it. Cover and let it fry until the bottom is crispy.
