Why cook your own beans?

Typically, in places like the US, buying canned beans is just about as expensive as buying dry beans and cooking them yourselves. But, here on the island, that certainly isn’t the case. For the price of one can of beans, I can make a batch easily 8 times the amount and get all different kinds of flavor profiles. For this batch, I was inspired by my sister who told me she put pumpkin in her red bean. That sparked the idea to have a fall themed bean for dinner this week. 

What I love about these longer recipes is that you can let them sit for a while and work on something else. Usually i’ll have my laptop ready to do work while the beans simmer away.

Fall Red Beans with Sweet Potato and Pumpkin


Equipment

  • 5 Quart Pot or Dutch Oven
  • Cutting Board
  • Knife

Ingredients

  • 1 Large Onion (2 Cups)
  • 1 Green Pepper (1 1/2 Cups)
  • 2 Cloves Garlic (1 Tbspn)
  • 1 Sweet Potato (2 Cups)
  • 1 lb Pumpkin
  • 1/2 lb Pork Belly
  • 1 lb Small Red Beans
  • 1 tspn salt
  • 1/2 tspn Pepper
  • 4 Cups Water
  • 4 Cups Veggie Broth
  • 1 Tbspn Dark Chili Powder
  • 1/4 tspn Smoked Paprika

Directions

Total Time: 2 Hours 30 Minutes

Servings: 10 Cups.

  1. Follow directions to prepare dry beans. I prefer to Soak over night in 4 cups of water.
  2. Prepare your ingredients: small dice onion, green pepper, and pork belly, mince garlic, large dice sweet potato and pumpkin.
  3. Add pork belly to 5 Quart Dutch oven and raise heat to medium. Fry pork belly until you get crispy browned edges.
  4. Add diced onions and sweet peppers, season with salt and pepper. Saute´ at medium heat until translucent.
  5. Add minced garlic, cook until fragrant, about 2-3 minutes.
  6. Add soaked beans, veggie broth chili powder, and smoked paprika. Simmer for 2 hours, until bean are fork tender, stirring occasionally.
  7. Add sweet potato and pumpkin and cook until tender, about 15 minutes.

Tips and Ideas!

  • For chips and bean dip, just blend up beans and heat up on the stove top or in a microwave.

  • Add chopped parsley for a vibrant topping, or Mexican cheese blend for an gooey gooey instagram ready scoop.
