Creamed Corn Casserole with Parmesan Cheese

We’re mixing this creamed corn casserole recipe up a little by adding sweet bits of red bell pepper to the mix, and I couldn’t be happier with the addition. We’re keeping all the sweet creamy goodness and adding a crisp layer of parmesan cheese on top.

If I could go back in time to all of thanksgiving past, I would make sure that we had corn casserole at every meal! The first time I tried it was actually at my mother-in-law’s thanksgiving dinner. Had I known how much I would have fallen in love with it, I would have served less mash, less green beans, less turkey, less everything else so I could eat more corn casserole! It’s my favorite thanksgiving side dish! It’s sweet, a little creamy, and oh so corny!

Creamed Corn Casserole with Parmesan Cheese

Ingredients

  • 1/2 Cup Melted Margarine
  • 2 Eggs Beaten
  • 1 1/2 Cups Frozen Corn Kernels
  • 1/2 Cup Diced Red Bell Pepper
  • 1 Can Creamed Corn
  • 8.5 oz box Jiffy Corn Muffin Mix
  • 1 Cup of Sour Cream
  • 2 Tbspn Parmesan Cheese

Directions

Total Time: 50 Minutes

Servings: 9.

  1. Preheat oven to 350ºF, and lightly grease a 9x9 inch baking dish.
  2. In a medium bowl, combine butter, eggs, corn bread mix, whole and creamed corn, diced peppers, and sour cream. Pour mixture into prepared dish.
  3. Sprinkle over the top with parmesan cheese.
  4. Bake for 45-50 minutes, or until the top is golden brown.

Notes, Tips and Ideas!

You don’t want to over cook this recipe, because you’ll end up with a dry bread. When you poke it with a toothpick it will come out just the slightest bit wet, and that’s okay!
