My husband is obsessed with chimichurri sauce. Any time he has a chance to dig into that stuff, he is literally pouring it over his meat, rice, heck, he would drink it if he could! When his plate is done, he literally, literally, licks the freaking plate!

Now… This is not  a traditional recipe. It doesn’t have red wine vinegar, it doesn’t use oregano, depending on who’s asking, it shouldn’t have red bell peppers or red pepper flakes. But that’s the beauty of cooking, we have the freedom to make things the way we want to. So long as it tastes good. 

What is Chimichurri? Chimmichurri?

Chimichurri originates from Argentina and Uruguay, and its a loose herbed sauce that’s typically served with grilled meat. It can be used as a marinade, basted while cooking, or served over the top of grilled meat.

Chop the Parsley by hand. Why? It’s just better.

I use some vegetable oil because it doesn’t make you burp as much as olive oil. What? Mhm. Just accept it.

Ingredients

  • 1 Cup Curley Parsley Minced
  • 3 Cloves Garlic Minced (1 1/2 tspn)
  • 1/4 Red Bell Pepper Diced (2 Tbspn)
  • 1/2 tspn Red Pepper Flakes
  • 1 Tbspn Lemon Juice
  • 6 Tbspn Olive Oil
  • 1/4 Cup Vegetable Oil
  • 1/2 tspn Kosher Salt
  • 1/4 tspn Pepper

Directions

Total Time: 15 minutes

Servings: 4 Servings.

  1. Start by preparing your ingredients: roughly mince parsley and garlic, and dice sweet peppers into small pieces.
  2. In an 8oz glass jar or small bowl, mix together all the ingredients, Adding salt and pepper to taste.
  3. For best result, let it sit in the fridge for an hour or more before serving to allow the oils to really infuse with the herbs and garlic.
