Honey Ginger Glazed Roasted Chicken Spin Off Meal

I love cooking a big batch of protein and using it in different ways throughout the week! We made a batch of Honey Ginger Glazed Roasted Chicken That was to die for! so naturally we had to incorporate it in a new and fun way! 

With Cabbage being so cheap on the island, it's our go to leafy green, and when I saw Budget Bytes recipe for Beef and Cabbage Stir Fry  I had to give it a shot with what was available in my kitchen. You know me! I prefer to avoid going to the store to pick up items I'll only use once! 

So if you're ready for a refreshing, crisp, and spiced up bite! Let me show you how I made Chicken and Cabbage Stir Fry with what you already have in your kitchen!

Chicken and Cabbage Stir Fry


  • Large pan with high egdges
  • Wooden Spoon
  • Knife
  • Cutting Board


  • 1 T Olive Oil
  • 1 T Ginger (1" piece)
  • 1 T Garlic (3 cloves)
  • 2 C Shredded Chicken(2 leg quarters)
  • 2 C Carrots, matchstick dice (2 medium carrots)
  • 2 T Soy Sauce
  • 1 t Honey
  • 1 t White Vinegar
  • 1/8 t Cayenne Pepper
  • 4 C Shredded Cabbage (1/4 Cabbage)
  • Green Onion
  • Fresh Red Beet, matchstick dice


Total Time: 30 minutes

Servings: 6 (1cup) servings.

  1. Heat up a pan with large sides to medium heat and add olive oil.
  2. Sauté Ginger and Garlic until fragrant, about 3 minutes.
  3. Add Chicken and Carrots and cook through until heated, about 5 minutes.
  4. For the Sauce, while the chicken cooks through, mix together Soy Sauce, Honey, White Vinegar, and Cayenne Pepper.
  5. Add Cabbage and Sauce Mixture to pan until preferred texture:
    2 Minutes : Crisp Cabbage
    5 Minutes: Soft Cabbage
  6. Garnish with finely sliced Green Onions and Fresh Red Beet.


This dish is best eaten fresh! just like a salad, you don't want that cabbage to get too soggy.

Fire Toppings!

1. Chicken Chicharron

I LOVE crisping up the skin of that leftover chicken and topping this dish with it! Super Simple! Just lay the skin in-between two napkins and microwave for a minute. All the grease will be soaked up by the napkins creating this chicharron of chicken skin! [insert drool face here] Chop it up and you have an amazing crispy topping!

2. Honey Ginger Glaze

if you like extra spice and still have leftover sauce from making the roasted chicken DEFINITELY recommend drizzling that saucy goodness on this dish too!
