Butternut Squash Macaroni and Cheese

Not Your Ordinary Mac & Cheese

You know me, always making things the wrong way. If it’s yellow, has some cheese, and uses macaroni pasta as a vessel its Macaroni and Cheese right?

This Mac n’ Cheese delivers a creamy and a light cheesey flavor. It’s comforting but not too heavy. The butternut squash and sweet peppers are sweet and the parmesan cheese is a savory and sharp. The added Mozzarella satisfies that ooey gooeyness craving.

Butternut Squash Mac & Cheese


Equipment

  • 5 Quart Pot
  • Roasting Pan
  • Knife
  • Cutting Board

Ingredients

  • 3 lbs Butternut Squash
  • 1 Tbspn Olive Oil
  • 1/2 tspn Kosher Salt

  • 1 lbs Elbow Pasta
  • 1 Tbspn Olive Oil
  • 1/2 Onion (1 Cup Diced)
  • 1 Red Pepper (1 Cup Diced)
  • 1 Clove Garlic (1/2 Tbspn Minced)
  • 1/2 tspn Kosher Salt
  • 1/4 tspn Pepper
  • 1 Cup Water
  • 1 Cup Parmesan Cheese
  • 1 Cup Mozzarella Cheese
  • 1 Tbspn Fresh Parsley

Directions

Total Time: 55 Minutes

Servings: 8.

  1. Preheat oven to 400º F.
  2. Cut the Butternut Squash into quarters and scoop out the seeds. Season with olive oil and salt and roast for 30 minutes. Once forked tender, remove skin and blend with some water.
  3. In the meantime, boil your pasta according to package directions.
  4. Heat a large pot to medium heat, add olive oil, diced Onion, Sweet Pepper, and minced Garlic. Season with salt and pepper. Sauté until onions are translucent.
  5. Add Butternut Squash puree and Parmesan Cheese until melted and smooth.
  6. Stir in elbow pasta and serve. Top of with Mozzarella Cheese and chopped Parsley

Tips and Ideas!

There are so many toppings that can go on a Mac n’ Cheese!

  • Crispy toppers like panic or bread crumbs

  • Salty toppers like bacon, pancetta, or prosciutto!

  • Complete the meal with a protein like shredded chicken or pork

  • Even add more freshness with herbs like basil, oregano, or some spinach
