Inspiration

Instagram can be such a great inspiration for new dishes! This week I scrolled a cross a pasta dish with avocado sauce by @TinasHealthyWorld. While I didn't exactly follow her instructions... I do have to give her credit for the Inso because I wouldn't have made the dish without thinking "damn, that looks good!"

If you do plan on making this dish, I don't recommend storing leftovers! The avocado starts to taste... a bit old. So this pasta is best eating fresh!


Avocado Pasta


Equipment

  • Large Pot
  • Medium Bowl
  • Fork
  • Knife
  • Cutting Board

Ingredients

  • 16 oz Rotini Pasta
  • 1/4 Cup Pasta Water
  • 2 Whole Hass Avocados
  • 1 tspn Garlic Powder
  • 1 tspn Oregano
  • 2 Tbspn Olive Oil
  • 1/2 tspn Vinegar
  • 2 Whole Plum Tomatoes
  • 1 Cup Packed Spinach
  • 1/4 Cup Cilantro
  • Kosher Salt
  • Ground Black Pepper

Directions

Total Time: 25 minutes

Servings: 8 (1 cup) servings.

  1. Put two quarts of water to boil, salted enough that it tastes like the ocean. Boil Pasta for 7-8, or package instructions for "al dente." When done boiling, reserve 1/2 a cup of pasta water. Drain water, and run pasta under cold water to stop cooking.
  2. In the mean time make the sauce. Peel and mash avocado, season with a pinch of salt and pepper, oregano, garlic, olive oil, and vinegar. Add 1 Tablespoon of pasta water to avocado paste at a time until you get a smooth consistency.
  3. Dice tomatoes, roughly chop spinach and cilantro.
  4. Mix everything together and serve!

Tips

Some Toppings that would be great with this dish!

  • Roasted Chickpeas (Great substitute for croutons!)

  • Mozarella or Parmesan Cheese

  • Fresh Basil
